ABOUT THE PROJECT
Yvan Chevalier, awarded One of the Best Craftsmen of France in chocolate-making and confectionery, has built his career around technical precision and a deep commitment to the craft. From his early apprenticeship to his 13 years as head chocolatier at Vincent Guerlais in Nantes, his work reflects discipline, experience and continuous refinement.
Winner of the Pascal Caffet Trophy and French representative at the World Chocolate Masters, Chevalier combines traditional technique with a precise, contemporary approach to chocolate and pastry.
The Masterclass Environment
Hosted at Chocolate Academy Athens, this chocolate pastry masterclass unfolded within a professional training setting designed for advanced training and the exchange of professional knowledge. The atmosphere combined experimentation and direct interaction between chef and participants.
The work captured both instruction and execution, from the precise handling of chocolate to the final refinement of signature creations. Rather than framing it as an event, the emphasis remained on craftsmanship: texture, balance, finish and the discipline behind each movement.
Professional Presence & Use
The resulting material reflects Yvan Chevalier’s role as both craftsman and educator. It supports Chocolate Academy communication and his professional presence within the international pastry and chocolate community.
Beyond documenting the masterclass, the project captures the exchange of knowledge between chef and participants: technique demonstrated in real time, questions addressed directly, and experience passed on through practice.
